Cal State San Bernardino officially welcomed the newest addition to the university’s food offerings with the grand opening and ribbon-cutting ceremony of Einstein Bros. Bagels Restaurant and Coyote Market at SBS on Tuesday, Jan. 29. Located in the first floor of the College of Social and Behavioral Sciences, the eatery features freshly baked bagels, breakfast and lunch sandwiches, as well as coffee and the Coyote Market convenience store. Both are open throughout the day and evening. “The addition of this eatery and store is another example of our commitment to enhancing the campus environment for our students and everyone who visits CSUSB,” said university President Tomás D. Morales. “This opening adds to the many food and drink options available on our campus, helping provide dining choices to fit a wide variety of wants and tastes.” Morales said funding from the University Enterprises Corp. made construction possible and the project “is an excellent example of how money spent at retail locations at CSUSB is reinvested back into the campus.” He added that by employing students, the eatery “also broadens our university’s continuing efforts to provide work opportunities for our students, which in turn improves academic accessibility, retention and performance.” The Einstein Bros. Bagels restaurant and Coyote Market hours are Monday-Thursday: 7:30 a.m.-9 p.m.; Fridays: 7:30 a.m.-5 p.m.; and is closed on Saturday and Sunday. For more information visit the CSUSB dining website.
